Chicken Enchiladas!



I tried a new recipe for Chicken Enchiladas last night and they were wonderful.   I found the recipe in an older Southern Living Magazine. I very seldom get rid a Southern Living Magazine. I found that if I keep them long enough, I can read them again and again.
Here is the recipe:

Chicken Enchiladas
3 c. chopped, cooked chicken
2 c. or 8 oz. shredded pepper jack cheese
1/2 c. sour cream (I use light sour cream)
1 (4.5 oz) can chopped green chiles, drained
1/3 cup fresh cilantro (I didn't have any, so I left out)
8 soft taco-size four tortillas

Cooking spray, like PAM

Topping:

1 (8oz) bottle of green taco sauce
1 (8oz) container of sour cream

Other optional toppings:
chopped tomatoes
chopped avocado
green onions
sliced black olives
chopped fresh cilantro

Preheat oven to 350 degrees
Mix first 5 ingredients in large bowl
Spoon about 1/2 cup chicken mixture into tortillas and roll up. Place in lightly greased 11 x 9 baking dish. Lightly coat tops of tortillas with baking spray.

Bake at 350 degrees for 30 or 35 min. until tortillas are slightly brown.
Stir together the green taco sauce and 8 oz. sour cream. Spoon over got enchiladas and sprinkle with desired toppings.
*Monterey Jack Cheese can be substituted.

Fall is Here!

Something about the cool weather makes me want to cook and eat! I guess my body is saying that I need to add on some extra pound so that I can make it through the winter! Like that's an issue!
Anyway, I have been baking like crazy! Last night around 8 PM, I decided that I MUST bake Banana Bread because I had a couple on bananas that might go bad if I didn't. I sure that if those banana turned to ripe to eat, then the world might end or something.....Anyway, I tried a new recipe from one of my Gooseberry Patch Cookbooks. If you haven't read a Gooseberry Patch Recipe Book then you must do so! I have collected them for years. They are filled with wonderful recipes, craft ideas, and other tidbits of goodness. They are just great to read when you want to have that wonderful cozy feel! I actually have a recipe that was published in one of their cookbooks! Anyway here is the recipe from Gooseberry Patch MOM'S Favorite Recipes. It is really good and easy to make.

Banana-Nut Bread

 Small loaves make great neighbor gifts.

1 - 1/2 c. sugar
1/4 c. oil
1/2 c. butter
2 eggs
1 1/2 c. bananas, mashed
2 c. all-purpose flour
1/2 t. salt
1 t. baking soda
1/2 c. chopped pecans
1 t. vanilla

Blend sugar, oil and butter together; mix in eggs and bananas. Combine flour, salt and baking soda; add to banana mixture. Stir in vanilla and pecans; pour into a greased 9" x 5" loaf pan. Bake at 300 degrees until a knife inserted in the center removes clean, about 1 hour or so.



Banana Bread French Toast this morning for breakfast. Yummy!

Topsy Turvy!

Just a little diddy about decorating and design! Something I call "Topsy Turvy"!
I am and always have been crazy about decorating! I would rather watch HGTV than eat!
Well, I like to watch HGTV and eat at the same time.....you get the picture. Anyway, after watching, I want to decorate! It's not rational to go buy new furniture and accessories so I just use what I already have....thus topsy turvy! I recently did this and re-did all my rooms in 3 days for less than $60.00. I'm not counting the sofa cover, I had purchased that months before. I did buy 3 new pillows at Ross's for $6.99 each. And a new picture for above my bed at Kirkland's. It was green tag for $34.99 and I bought at the 25% off that so the picture cost me less than $30.00. ( I'm not good at math!).

Here's how to start.

1. Decide on which room you want to work on. Just one room! ( I started in the living room).

2. In the room take everything off the walls and all the accessories off the table tops, shelves, etc.

3. Place all the accessories on the dinning room table and lean all the pictures against a wall.

4. Now that you have a blank slate, re-think furniture arrangement. (if you have the luxury of the space). Just remember that balance is important! If you have a fireplace, you may want to center the sofa in front facing the fireplace, or 2 side chairs on each side. Just  try to balance your larger furniture with windows, fireplace, etc. I can't re-arrange furniture because the space is small. It is what it is!

5. Place your area rug, if you have one. I took the rug from a bedroom.
 Add large pieces of furniture, sofa, chairs and so on.
If you don't like your sofa color then a cover can be a great option to consider. You can change the whole atmosphere of a room with a rug, sofa and one large art work. I bought a sofa cover at Bed Bath and Beyond to cover a floral sofa. I bought light beige since my living room was small and my living, dining, and kitchen was all open space, it was important that I used neutral colors to create a more spacious look.

5. Now add smaller tables, one at a time. Again remember balance. If you don't like your end tables, then paint them! Don't buy new, painted furniture is all the rage. If the piece is solid, then great!
If you aren't sure about colors, stay neutral, beige, light gray, white or black. Even a light blue or light green, light yellow can look fab-u-lous and be considered a neutral.

NOW FOR THE FUN! ACCESSORIZE! Remember, your adding one layer at a time here....

6. Add lamps, lighting is soooo important and can set the mood of your room. Look in your other rooms for lamps and accessories. You will have left overs to use back in these rooms.
If you lamps don't match, it's OK. But you might want to balance the height of the lamps by placing a stack of books under until they are similar in height. Or you can use a tall accessory, vase, floral arrangement, etc. I have a lamp on one end of my buffet, so I added a large pitcher (from the kitchen with floral stalks on the other end of the buffet. Again, spray paint....if you want a different look then paint them. Place lamps for reading and task lighting and also remember to highlight bookcases and shelves.

 7.  I would recommend using small accessories with caution. Too many smalls can create a cluttered look. Choice your larger accessories for living area and save the smalls to other rooms.You can add a few smalls after you add your larger pieces.

8. Pillows and throws....Now for this you may want to buy a few new throw pillows. Just remember that you can mix colors and patterns. Pillows can be expensive, so check Ross's, Walmart, TJ Max for pillows. Also, remember to check the outdoor department for pillows at the end of the season, they can be less expensive than the home department.

This may sound like alot..but you can do this in an afternoon.  You don't have to spend money to have a great room!

Pallet Island

I have been terrible about posting to my blog and I apologize! I have a way of going where life leads me and lately it I have been doing other things. My granddaughter has been at St. Jude's in Memphis for surgery on her eye. All is well, she is back at home healing nicely. My daughter is moving into a house that is short on storage. So I have been finding ways to add some in creative ways!

I was inspired by a post I saw on Pinterest about making stuff from wood pallets. The blog is called "Beyond the Picket Fence".  The post warned that using rough pallet wood is not for the faint of heart! I am a believer of that! This was not a easy project to undertake. I really enjoyed making this island for my daughter's kitchen and I think it turned out great! I didn't take pictures along the way, mainly because I worked on it a little bit here and there. It took me about 5 days to complete, but that was probably about 10 hours of work, total. If you have any questions about it, let me know!

$3.00 Art Work! How?

I love bargain fabric! I can't help it, it's in my DNA! I come from a long line of quilters.
Several months ago, I bought fabric samples from a local store that was going out of business. I paid $1.00 per sample! I knew that they would come in handy for recovering a chair cushion or making a pillow cover! But I found picture frame stretchers from IKEA at the local thrift store. I paid $2.00 per stretcher! What a bargain! I wished for more, but only found 2 of them.

So, here is my $3.00 artwork! Simple to make! See how below!
You will need to assemble your stretcher. You can buy these stretchers at craft stores, like Hobby Lobby. They aren't very expensive! Very easy! Next.....
Press your fabric! I used Magic Sizing on mine! Next....
Attach your fabric to the stretcher. You can use a staple gun  or small nails! Be sure to attach the fabric by one nail or staple on each side of the frame. It will hold your fabric taunt while you finish each side. Corners can be tricky, I use the same technique as wrapping a box for a present to get square corners. You can do it!

As you can tell from the different fabric, I did two pictures using my fabric samples. I am thinking I will hang one in my bedroom or bathroom and the other in the entrance hall with my orange mirror! I LOVE A BARGAIN!

Feet Up! Big Day!

Went to the Bentonville Farmer's Market this morning and bought lots of fresh vegetables, corn, cabbage, cucumbers, spinach and tomatoes. We will have a great dinner tonight! After the market,
I met an old friend for lunch. . We had long visit catching up (hadn't seen her in years!) Then we went prowling for rocking chairs for her front porch. We didn't find rocking chairs, but we had fun anyway!
We visited several flea markets! After a few minutes rest, COOKING time! How about those blue toenails!
