Fall is Here!

Something about the cool weather makes me want to cook and eat! I guess my body is saying that I need to add on some extra pound so that I can make it through the winter! Like that's an issue!
Anyway, I have been baking like crazy! Last night around 8 PM, I decided that I MUST bake Banana Bread because I had a couple on bananas that might go bad if I didn't. I sure that if those banana turned to ripe to eat, then the world might end or something.....Anyway, I tried a new recipe from one of my Gooseberry Patch Cookbooks. If you haven't read a Gooseberry Patch Recipe Book then you must do so! I have collected them for years. They are filled with wonderful recipes, craft ideas, and other tidbits of goodness. They are just great to read when you want to have that wonderful cozy feel! I actually have a recipe that was published in one of their cookbooks! Anyway here is the recipe from Gooseberry Patch MOM'S Favorite Recipes. It is really good and easy to make.

Banana-Nut Bread

 Small loaves make great neighbor gifts.

1 - 1/2 c. sugar
1/4 c. oil
1/2 c. butter
2 eggs
1 1/2 c. bananas, mashed
2 c. all-purpose flour
1/2 t. salt
1 t. baking soda
1/2 c. chopped pecans
1 t. vanilla

Blend sugar, oil and butter together; mix in eggs and bananas. Combine flour, salt and baking soda; add to banana mixture. Stir in vanilla and pecans; pour into a greased 9" x 5" loaf pan. Bake at 300 degrees until a knife inserted in the center removes clean, about 1 hour or so.



Banana Bread French Toast this morning for breakfast. Yummy!
